Bonito Flakes
Introduction:
Bonito flakes are made from Skipjack. After the removal of the head , tail, and fish bone, only take the abdominal part. Steam but not boil the fish (boiling may loss the nutrition and hard to do the next process). After the fish is cooked, charbroil it with slow fire for more than 10 days, When the water is evaporated, the fish will become dark and hard like wood. Cut it into flakes by machine or planer.

Application:
Bonito flakes are commonly used in Japanese cuisine. It can be added into soup to stew with other foods or sprinkled on the finished dish. For example, when cooking Japanese dishes like tonkatsu rice bowl, bonito flakes are usually used as soup base. The food will taste more delicious!
